In culinary school, we learned that a chef is only as good as an omelet.  Well, it's scary.  I've learned that it doesn't really have to be.  Omelets are no scarier than good fried eggs.  A gentle drag then makes the cheese and the perfect blanket for your favorite filling.  Here are some tips to help you become a master chef at breakfast.

  If you have never had a burrata, you need to try this simple recipe!  Rich cheese with perfectly fresh tomatoes, peaches, and a vibrant lemon-thyme oil.

  Over the years, I have written a lot about how the best summer dishes are simple (see here, here or here).  Because summer fruits, vegetables, and herbs are such a powerhouse element, it only takes a few extras - perhaps a drizzle of olive oil and a sprinkling of salt - to make a delicious savory dish.  Recently, I have seen Barrata popup in all of the Chicago restaurant menus.  Because Creamy Cheese is a simple, rich accent for summer production, I can't resist making a burrata recipe of my own.

  The end result is one of our new favorites around here.  It is sweet, vegetarian, and easy to make, with the right balance of fresh and rich components.  For the rest of the summer, it will be an appetizer for me, and I hope you like it too.

  What is Burrata?

  If you have never heard of Barreta, you are in for a cure.  It is a fresh Italian cheese made from cow's milk.  In-store, it looks like fresh mozzarella, as it comes in balls.  In fact, each ball is a bag of rich, fresh cream-filled fresh mozzarella.  You can find burrata in specialty cheese shops or most grocery stores with a nice cheese section.  It pairs well with both sweet and savory flavors, so I made this recipe with a jumble of stone fruits, tomatoes, and fresh herbs.

  Burrata Salad Recipe Ingredients


  Instead of whispering together with a dressing, I make a simple infected oil for this recipe.  It has a mild, lemon-thyme flavor that gives a creamy burrata and fresh produce.  It is easy to make - just peel and mix 1/2 cup of olive oil into strips with a smoked garlic clove, 4 sprig thyme, and 1 lemon peel.  Heat it on your stove, and then let it stand while you prepare the other recipe components.  Before you drip it on the salad, take out the thyme, garlic, and lemon.

  With infected oil, I added Barata with a fall in the summer produce market.  This recipe is all about fruits and vegetables, so use the best you can find!  Here's what you need:

  Barretta, of course!  I use a ball, but feel free to try this recipe if you are serving a crowd.

  Fresh Tomatoes - A mix of colors and sizes make this Baata Salad extra fun.

  Peaches - See ripe, yet firm fruits that when harvested will hold their shape.

  Cherries and/or Current - These people are not completely necessary, but they are very spicy, unlike sweet peaches and tomatoes.

Fresh herbs - I garnished mine with basil and parsley, but peppermint or parsley would also make a nice addition.

  Crushed toasted pistachios - They add a delightful, nutty slice.

  Sea salt - don't skimp on it!  The salt will really highlight the herbal, sweet, and salty notes of this dish.

  Pile everything on a plate with burrata in the center, and generously drizzle with lemon-thyme oil.  Serve with good crusty bread - I like baguettes or citrus.  Then, dig a little bit of cheese with every bite!
