Over the years and for years, I have wanted to post an easily prepared egg recipe on the blog. And for years, I always accidentally shut it down. But with Easter around the corner, I felt that today is the perfect time to share my back pocket, tried-and-true, classic-with-something-modern-modern, always-always-a- Recipe with you for the crowd favorite free best-prepared eggs!

They are super easy to make (plus I’ve included tips on how to start them ahead of time if you wish). If you like, they can be made with traditional mayo, or if you are not a Mayo fan like me, you can lighten them by swapping in Greek yogurt. I like to cook with a squeeze of fresh lemon juice instead of vinegar, which helps them shine a little. But nothing, I just love this recipe made from eggs because these little ones are irresistibly good. When they serve me for Easter dinner or Springtime brunch, they immediately disappear, and people always ask what is in them that makes them so light and delicious.

So today, I am happy to finally share my best tips and secrets on how to make the best-prepared eggs. Let’s do it!

To make this easy-to-prepare egg recipe, all you will need is:

Hard-boiled eggs: Either easily made on the stovetop or – in my favorite – instant pot.

Greek Yogurt (or Mayo): Up to you! I’m not a huge fan of mayo, which is traditionally used to make stray eggs, so I prefer to swap in plain Greek yogurt instead.

Lemon juice (or vinegar): I love the fresh taste of lemon juice. But vinegar (white, white/red wine, or apple cider vinegar) is a traditional option and will also work well.

Dijon mustard: Feel free to add a little more, depending on how much you like your egg.

Garlic Powder: Just one 1/2 teaspoon to complete the filling taste.

Salt and Pepper: Specifically, fine sea salt and fresh pepper.

Topping: For classic delved eggs, I usually top mine with a little sprinkle of smoked paprika and maybe some chopped fresh leaf.

Prepare your yolk filling: Cut the hard-boiled eggs in half lengthwise, and take out the yolks in a small bowl. Mash them well with a fork, then shake the Greek yogurt, lemon juice, diazinon, garlic powder, salt, and pepper together until fully combined. (If you want to do a super-smooth filling, you can blend these ingredients for one thing instead of blitting them in a food processor.

Fill the egg whites: Using a spoon or a small cookie scoop or a piping bag (until you!) Fill the egg whites with the yolk mixture.

Sprinkle and Serve: Top each prepared egg with the toppings you want, then serve them well and fresh!

There are about a million different ways to customize your easy-to-prepare egg dishes, so great creative and have fun with them! For example, feel free to:

Add avocado: Avocado ready eggs, sub in well-mashed avocado instead of just mayo. YUM.

Mix some pickles: This is to make eggs traditionally prepared with salty or pickle juice in the south.

Add some sauce: A dash of Worcestershire can fill.

Add some heat: such as a pinch of cayenne, Sriracha, fresh or spicy jalapenos.

Mix some cheese: Soft boiled cheese (such as feta or goat cheese) works well. Or grated tart Chander or smoked gouda would also be delicious.

Add some seasonings: I am obsessed with these “everything” deviled eggs, made with all the bagel seasonings. But curry powder, darkening powder, or Italian seasonings are some of my other favorite seasonings.

Add fresh herbs: Alternatively, you can also cut and add your favorite fresh herbs.

Add some bacon: I won’t argue with a sprinkling of bacon bit on top of my devilish eggs.

How to make pre-prepared eggs: You can prepare the egg white and the mixture up to 3 days in advance, and refrigerate each separately in tightly sealed containers and prepare until assembled.

What to do with the survivors? Make an egg salad and serve it on some nice bread!
